The Esparrago de Navarra (asparagus of Navarre) has been protected by a Specific Designation since 1986 and the Protected Geographical Indication (PGI) since 2003.
These designations were created to protect the crops of the Ebro riverbanks from productions from other origins, and guarantee the end consumer compliance with strict quality standards.
Asparagus of Navarre is white in color, smooth in texture, with no fibrousness. The perfect balance in the softness of its bitterness on the palate is due to the cold nights in the production area, the quality of the water and the farming systems used to obtain it.
Each stalk must be unearthed and cut by hand.
